The Sunday Service

I haven't done a food post in a while, to be perfectly honest we have been stuck in a bit of a rut. To cure said Rut-stuck-ed-ness I decided to go simple.


Food that we all like, keeping it super simple and easy, and most importantly budget friendly.


  This Puff Pastry Pizza is incredibly simple to do, is great to use up bits in the fridge, and as I said is pretty cheap, very tasty and rather filling.


It does require a little prep, but it is totally worth it. I promise. You just need to remember that excess liquid will make the pastry soggy.


The method is at the end of the post. Its dead easy and really worth trying... especially if you like pizza:



You'll need:

A packet of streaky bacon (smoked if you can)
A packet of Puff Pastry
Half an onion finely diced
2 cloves of garlic crushed
Some chopped mushrooms
a bit of cream cheese
some left over ham (sandwich ham is fine)
some fresh spinach (that came from the garden)
Left over cheddar, cubed

My Puff pastry comes ready rolled. Unroll the pastry and cut it & the paper it comes on in half and roll it out a bit more to make 2 good sized square pizzas. Spread a bit of cream cheese onto the puff pastry, avoiding a 1 cm border around the edges.

I heat the oven to 200DegC, and place the bacon onto tin foil to bake it so that it is crispy. While the bacon is baking, I fry off the mushrooms, because they contain so much liquid, they can make the pastry soggy...when the mushrooms are done I put them on a plate and fry the onions & garlic in the same pot.

Chop the spinach roughly, and wilt it by putting it into a sieve/colander and pouring a boiling kettle over it. Leave the spinach to drain.

Bacon should be done by now, so take it out, leave the oven on and make sure its at 200degC and chop it roughly. Do the same with the ham, then slice the mozzarella ball in half and slice each half finely.

Spread the Bacon & Spinach & some of the onions & garlic onto one of the pastry bases, and top with half of the mozzarella. Spread the Ham & Mushrooms & Onions onto the other base and top with the rest of the mozzarella.

Pop both pizzas (while on their paper) into the oven and bake for 20 minutes until the puff pastry border is risen and golden and the cheese is melted.

Slice and enjoy.
